Super Creamy Sunday Soup
Now that these cold almost winter days are here, it’s nice to eat something that warms your soul and body. This soup is perfect after a long Sunday run or walk, or just for a any day of the week.
I actually planned on doing just a simple pumpkin soup but while I was cooking I started to go all out with ingredients.
Recipe:
1-2 tablespoon Coconut Oil
1 whole Pumpkin (chopped in small chunks)
4-6 Potatoes (chopped in small chunks)
good chunk of fresh Ginger (chopped)
2 dl Coconut Milk
1 dl dry Red Lentils (rinse well with water)
5 dl Water
1 tablespoon Peanut Butter (creamy, organic, non sugar one is the best)
Salt to taste
1/2 teaspoon White Pepper
1/2 teaspoon Cayenne Pepper
In a big pot warm the coconut oil, then put pumpkin, ginger and potatoes and let them simmer in the oil for a bit. Add rinsed lentils, spices, peanut butter and water. Water should cover the ingredients just about, not too much. Let them boil until the veggies are little overly soft. Blend all with a blender and add coconut milk. Mix and enjoy!
